Sweet Potato Toast with Avocado and Egg

Ingredients
- ¼ avocado
- ⅛ tsp garlic powder
- ¼ tsp ground pepper
- 1 large egg
- 2 tsps Food of Ages Extra
- Virgin Avocado Oil
- 1 sweet potato
- 1 tsp Sriracha chili sauce (Optional)
- 1 tbsp sliced scallion (Optional)
Preparation
- Slice the potato lengthwise into even slices (approximately 1/4 to 1/2-inch thick) using a knife or mandoline.
- Then place them onto a parchment lined baking sheet. Bake for 30 minutes, or until slightly toasted. Thicker slices may require a bit more time.
- Prepare your pan with a drizzle of Food of Ages Avocado Oil
- Fry the eggs
- In a small bowl, gently mash the avocado with the pepper and garlic powder.
- Place the avocado mixture and cooked egg on top of the toast. If desired, top with Sriracha and scallion.
