  1. Slice the potato lengthwise into even slices (approximately 1/4 to 1/2-inch thick) using a knife or mandoline.
  2. Then place them onto a parchment lined baking sheet. Bake for 30 minutes, or until slightly toasted. Thicker slices may require a bit more time.
  3. Prepare your pan with a drizzle of Food of Ages Avocado Oil
  4. Fry the eggs
  5. In a small bowl, gently mash the avocado with the pepper and garlic powder.
  6. Place the avocado mixture and cooked egg on top of the toast. If desired, top with Sriracha and scallion.
